SEATTLE, May 16, 2012 (GLOBE NEWSWIRE) — Plandai Biotechnology, Inc. (OTCBB:PLPL.OB – News), a producer of highly bioavailable botanical extracts, today announced a preliminary agreement with ZZ2, a private farming conglomerate in Southern Africa and the largest producer of fresh tomatoes in the continent of Africa. Based on a long-standing working relationship, Dunn Roman Holdings Africa (Pty) Limited, a subsidiary of Plandai, will, under a new contract, acquire tomato waste from ZZ2 which will be processed to recover highly bioavailable antioxidants using the company’s exclusive Hydrodynamic Extraction System.
Plandai Chairman and Chief Executive Officer, Roger Duffield, commented, “As with green tea catechin extract, our hydrodynamic system converts the tomato carotenoid isomers into a highly bioavailable product. This partnership with ZZ2 is especially advantageous because it gives us an extremely inexpensive and readily available source material throughout the year. With an initial agreement to acquire 30 tons of tomato waste per day, we can yield substantial volumes of carotenoids (lycopene, phytoene and phytofluene). With the current market price for even poorly-absorbed lycopene at $ 3,000/kg, this opportunity could add in excess of $ 700,000 in monthly revenues.
Discussing the timing of commencing production of these carotenoids, Mr. Duffield added, “A huge portion of our prior research has been in this field and has already been validated through a USDA study. As shown in the recent publication by Dr. Ishida in Food Chemistry–Effects of a Hydrodynamic Process on Extraction of Carotenoids from Tomato–Plandai’s extraction process has already demonstrated the ability to deliver highly bioavailable carotenoids in numerous studies undertaken in conjunction with the California tomato processing industry and the USDA. In addition, unlike our green tea catechin extract, there will be no delay in getting raw materials ready for extraction. ZZ2 has an ample and ready supply of tomato waste available 365 days a year. We therefore anticipate that the tomato carotenoid extracts could actually come to market well ahead of our green tea gallate extract and bring us one step closer to becoming the world’s largest supplier of highly bioavailable botanical extracts from live plant materials.”

How To Confit A Tomato – Sheknows.com

Just as confit can preserve the most perfect summer tomato when September crops are abundant and sweet, it can also rescue a winter tomato that was unwillingly born into the world, bitter and stubborn.
“Confit” — it sounds so sophisticated, doesn’t it? To the contrary, it’s an easy technique; it means to preserve by being salted and cooked slowly in fat, most often referring to duck, which cooks in its own fat. For vegetables, we have to add fat, in this case, olive oil.
As the technique suggests, thick slices of tomato are cooked in luscious olive oil with salt and herbs. After a long, warm stay in a dry oven, the tomatoes literally ooze a sweet, caramelized, complex flavor.
Tomato confit is perfect for antipasto, in sandwiches and salads. The tomatoes can be pureed for a roasted tomato soup, a tapenade spread or a roasted tomato sauce.
Step 1: Prep
Preheat oven to 275 degrees F. Add chopped garlic to the olive oil and set aside. Slice each tomato into approximately quarter-inch-thick rounds — you should be able to get five slices out of each tomato. Line a baking sheet with parchment paper and brush the parchment with a generous layer of olive oil.
Step 2: Season
Place each tomato slice on the parchment in a single layer. Tomatoes will shrink in the oven, so it’s OK if they’re touching, but do not overlap. Remove the garlic chunks from the oil. Drizzle the rest of the olive oil evenly over the tomato slices, using the basting brush as needed to saturate each tomato. Use all of the oil, even if it’s running over the sides of the tomato slices. Lightly sprinkle kosher salt over each tomato slice, followed by cracked black pepper. Lay each of the full rosemary sprigs over as many of the tomatoes as possible. Do not separate the leaves from stem — use the whole sprig so the flavor is infused without bits of leaf.
Step 3: Roast
Roast in the oven for 25 minutes. Check the tomatoes — if they’re not slightly caramelized and soft, leave them in the oven for another 10 minutes. Repeat until they’re soft and jam-like, but not burnt. Remove the rosemary sprigs after roasting and discard.
Step 4: Enjoy
Store tomato confit in the refrigerator for up to seven days.

Tomato Head restaurant leaving Maryville, opening in West Knoxville
KNOXVILLE (WATE) – The Tomato Head restaurant is closing its location in downtown Maryville and opening a new location in West Knoxville.
Scott Partin, who co-owns The Tomato Head with Mahasti Vafaie, said it will open in West Knoxville’s Gallery Shopping Center in August. It will be located where the Silver Spoon restaurant is currently.
It’s been difficult to staff the Maryville location at 211 W. Broadway Avenue, according to Partin, for at least the last year and a half. He says they don’t believe they’ll have staffing issues in West Knoxville.
The Tomato Head opened in Maryville five years ago. The entire staff there has been offered positions at the new location.
Despite the owners’ decision, there’s a Keep Tomato Head in Maryville page on Facebook.
The Tomato Head began as the Flying Tomato in 1990 and maintains a location on Market Square in downtown Knoxville. It also operates Flour Head Bakery in Knoxville at 5424 S. Middlebrook Pike.
Tomato Head moving into Silver Spoon space in West Knox
The co-owners of a popular restaurant announced Monday they will be moving one of their locations.
The Tomato Head Maryville location will be moving to West Knoxville in The Gallery shopping center at 7240 Kingston Pike. That location was previously occupied by the Silver Spoon American Cafe.
The restaurant owners say they have offered jobs at the new location to their Maryville staff.
They hope to move their restaurant in mid-August.

Tomato Head to close in Maryville, open in West Knoxville
The Tomato Head is closing its downtown Maryville restaurant with plans to open a new location in West Knoxville.
Co-owners Mahasti Vafaie and Scott Partin said in a statement released late Monday that The Tomato Head will open in the Gallery Shopping Center, where the Silver Spoon restaurant is currently located, in August.
It was unclear whether The Silver Spoon would be closing or relocating, but employees confirmed the restaurant must vacate its location by the end of the month.
Vafaie and Partin said the decision to close Maryville was based on the opportunity to open a restaurant in West Knoxville, and they felt they didn’t have “the human resources to manage three locations.”
“The Gallery presents a unique opportunity to operate The Tomato Head in a high volume location of West Knoxville that we feel will be a good fit for our restaurant,” they said.
Vafaie and Partin, who could not be reached for comment, opened the Maryville restaurant in Blount County five years ago. They have offered positions at the new location to the entire staff in Maryville.
The Tomato Head was founded in 1990 and is located on Market Square. It also operates Flour Head bakery at 5424 S. Middlebrook Pike.

A recipe from a book called "Soups". Absolutely so wonderful that my husband told me at least three times during dinner that it was great.
The recipe follows:
1 lb ripe Italian plum tomatoes, halved lengthwise
1 large red bell pepper, quartered lengthwise and seeded
1 large red onion, quartered lengthwise
2 garlic cloves, unpeeled
1 tablespoon olive oil
2 pints/5 cups vegetable stock (I always use Better Than Bouillon Organic Vegetable Base)
good pinch of granulated sugar
scant 1 cup small dried pasta (tubetti or kid-friendly shapes)
salt and ground pepper to taste
fresh basil leaves to garnish
1) Preheat ovent to 375F. Spread out tomatoes, red bell pepper, onion and garlic in a roasting pan and drizzle with olive oil. Roast for 30-40 minutes until the vegetables are soft and charred, stirring and turning them halfway through cooking.
2) Tip the vegetables into a food processor, add about 8 fluid ounces/1 cup of the stock and process to a puree. Scrape into a sieve placed over a large pan and press the puree through with the back of a spoon into the pan. (I did not press through a sieve since I like texture in my soup and wanted to sneak as many vegetables into Judah as possible).
3) Add the remaining stock and salt and pepper to taste. Bring to a boil.
4) Add the pasta and simmer for 7-8 minutes (or according to package directions); stir frequently until al dente. Taste and adjust seasoning, if necessary. Serve immediately in warmed bowls, garnished with basil leaves.
My notes:
We buy pasta in the dry bins at Whole Foods and Judah picked out multi-shaped pasta that was a mix of shells, rotini and elbow. The bonus was that he chose pasta that was made from spinach, durum, etc. I went very light on salt because you don’t want to overpower the dish since the roasted vegetables lend a great smoky flavor to the soup. I rubbed some fresh garlic clove on some bread and served garlic toast on the side.
Judah loved this soup and asked me to put it in his lunchbox for the next day. He had no idea that he was eating vegetables beyond tomatoes.
